Along the relatively scant restaurant scene of Church Street and amidst the throngs of furniture shops there are a few iconic Melbourne dining gems. Pillar of Salt happens to be one of them. Located next to the Royal Saxon, it’s pretty hard to miss the hordes of people standing around the tiny shop front on any given weekend morning. It’s become an unfortunate Melbourne reality that you know a place is good when there is a list, which means you might be faced with a short wait if you snooze that extra bit too long on the weekend.

However, the interior is deceptively bigger than might be perceived from the outside and therefore waiting time shouldn’t be as long as you might initially expect. Tables are quite cramped in the shop front, but ideal seating is located down the back in the courtyard, which has a range of booths and high bar tables (it’s also completely undercover and decked out with heaters for these colder months).

Pillar of Salt is renowned for its breakfast fare and their pride is apparent when your dish arrives at the table. Everything is picture perfect and presented beautifully. Without a doubt, their stack of perfectly thick and fluffy American style pancakes have a reputation all of their own, served as they are with ruby red cubes of apple, rhubarb and vanilla bean jelly, whipped crème fraiche, fresh strawberries and blueberries and chocolate infused maple syrup. Pretty much every table is adorned with these picturesque little stacks and once you’ve tried them it will become quickly obvious why people line up to eat here.

The cafe’s larger menu also reaches beyond the standard breakfast fare through a range of dishes that transport you around the globe, such as pan-fried Portuguese sardines, kimchi corn and sweet potato fritters and Turkish Çilber eggs. Don’t worry though, classic breakfast staples such as porridge, smashed avo and chili scramble are also available for those needing something a bit closer to home.

Thanks to places like Pillar of Salt and the nearby Top Paddock up the street, the once industrial area of Richmond’s Church Street is now the place to experience some of Melbourne’s best brunch offerings. If you’re questioning if any brunch is worth the wait, don’t – this is definitely food worth waiting for.
