New kid in town, Henry Sugar has opened its doors in Carlton bringing together a cocktail and wine bar with a dining menu that’s putting sweets in the limelight.

With a name that takes inspiration from a Roald Dahl children’s book character, it’s a new joint venture for Kiwi chef Michael Baker (formerly of Hell of the North) and business partner, bartender Daniel Mason (Joe Taylor, Cookie, Toff in Town).

Together they’ve whipped up a share menu more than a few surprises, such as a lentil parfait, glazed with Pedro Ximinez and served with house brioche. You’ll also find items such as a tartare of tofu with sesame puff, or grilled octopus served with sobrasada and fennel.

It’s the desserts, however, that are a key focus with treats such as coconut custard, coconut granita, mirin and citrus sorbet. There’s also a meringue, sumac, fruit and vermouth, which can be paired with alcoholic or non-alcoholic options, like house fermented Tonka-Cola, or a fizz of lemon myrtle, bramble-tea gin, raspberry & citrus.

Set in an old Victorian frontage shop, it’s a cozy, relaxed eatery ideal for a wine and a chat, a romantic date night or an evening with friends. The interiors are freshly re-designed with a feature fireplace, exposed brick walls and a charcoal cement bar top. There will also be street seating for those wishing to enjoy a cocktail in the afternoon sun.

You’ll find a range of local beers on tap as well as local and international wines. The specially curated cocktail menu has been designed to pair with the dining menu, something to think about as you browse down the list. You’ll also find interesting flavour combinations, such as locally made moonshine, and several lighter alcoholic options focussing on vermouths, sherries and sake.

The team also make their own sodas using seasonally available fruit that is then carbonated naturally via fermentation.
